Mary Gillis cresce em uma família conturbada e se apaixona por Arthur Morgan. Os dois ficam noivos, mas a vida de Arthur na gangue Van der Linde e a reprovação da família dela acabam com o relacionamento. Mais tarde, Mary se casa com Barry Linton, que morre de pneumonia. Seu pai, Mr. Gillis, afunda na bebida, no jogo e nas dívidas, enquanto Jamie entra para os Chelonians. Viúva e sem conseguir lidar sozinha com a família, Mary passa a usar o sobrenome Linton e volta a procurar Arthur.
Em Horseshoe Overlook, Mary escreve para Arthur depois de anos sem vê-lo e pede que ele salve Jamie dos Chelonians. Arthur desconfia da família Gillis, mas aceita procurar o rapaz. Ele persegue Jamie, convence-o a abandonar o culto e o leva até Mary na estação de Valentine. Ela agradece a Arthur e parte de trem com o irmão. Arthur percebe que seus sentimentos por Mary ainda tornam difícil negar qualquer pedido dela.
Em Saint Denis, Mary pede a ajuda de Arthur para lidar com o pai. Mr. Gillis a ofende antes de ir embora, e Arthur e Mary o seguem até um beco, onde o encontram vendendo um broche que a mãe de Mary lhe deu. Mary enfrenta o pai, enquanto Arthur recupera o broche com Ashton. Depois, Mary convida Arthur para ir ao teatro. Eles passam a noite juntos, mas Arthur não consegue deixar a gangue, apesar de dizer que talvez ainda possa fugir com ela.
Em Beaver Hollow, Mary manda a Arthur seu antigo anel de noivado e uma carta de despedida. Ela diz que ele não apareceu para encontrá-la após o roubo, como havia prometido, e que os dois precisam se separar. Arthur mais tarde entrega o anel a John Marston, que o usa para pedir Abigail Roberts em casamento. Depois da morte de Arthur, Mary visita seu túmulo e chora.

- ◆Should Arthur refuse to assist Mary in "We Loved Once and True II", the contents of her letters will also change slightly depending on whether Arthur previously helped her out.
- ◆Susan Grimshaw expresses her disdain for Mary, stating that she "never liked her". Similarly, Tilly Jackson says to Arthur that Linton is "not worth it". Mary-Beth Gaskill says to Arthur that Mary was a fool in "No, No and Thrice, No". This line can also be heard in "A Fork in the Road" if the player has high honor. Mary-Beth additionally mentions her in several private conversations at Horseshoe Overlook and Beaver Hollow. John Marston will also mention Mary once in "The Sheep and the Goats" when the two of them are arguing and comparing their own lives. Karen Jones asks Arthur if he will get back with Mary to which he responds that "it's too late".
- ◆Abigail Roberts on the other hand will mention that she "always liked" Mary. Considering that Abigail joined the gang in 1894, this implies that Arthur's relationship with Mary before the latter got married must have lasted at least until then.
- ◆For the credits scene where she cries over Arthur's grave, her motion-capture was done by Roger Clark, who is Arthur's mo-cap, voice actor, and face, as Julie Jesneck wasn’t present that day.
