Crustaceans comprise two animals in Red Dead Redemption 2: the Cuban land crab, Gecarcinus ruricola, and the red swamp crayfish, Procambarus clarkii. The crab is collected for Crustacean Meat and a Crab Carcass. The crayfish yields Crayfish instead, separating the two species in the materials they provide.
Cuban land crabs occur around Flat Iron Lake, Guarma and the San Luis River. Red swamp crayfish live in Bayou Nwa, where they are found in searchable holes in the mud. These holes can be spotted with Eagle Eye, which marks them with gold sparks amid the swamp.
The crab provides the meat used for the final Herbalist Challenge, while the crayfish is used as fish bait. Crabs are killed cleanly with small game arrows. Although both are crustaceans, only the crab supplies Crustacean Meat, and only the crayfish is reserved for bait.

- โThe compendium states that crayfish can be killed with a bow and arrows. However, they can only be collected by searching crayfish holes.
