Dopo che Trevor Philips completa Fair Game per Cletus Ewing, Hunting diventa disponibile nella Chiliad Mountain State Wilderness. Durante le ore di luce, Trevor si reca al rimorchio di caccia nella natura selvaggia per iniziare una sessione. Indossa il suo abbigliamento da caccia e ottiene accesso al richiamo per animali di Cletus e a un Sniper Rifle con munizioni illimitate per la battuta. Un Blazer è parcheggiato fuori dal rimorchio per spostarsi nella natura selvaggia.
Trevor segue le tracce della fauna attraverso la riserva di caccia, usando il richiamo per attirare gli animali e restando sottovento affinché non ne percepiscano l'odore. Qui si possono cacciare alci, coyote, cinghiali, puma e uccelli. Cletus paga in base all'animale e al modo in cui viene ucciso, con colpi precisi al cuore, al collo o alla testa di un alce che valgono più dei colpi mal piazzati. Durante una battuta, Trevor può anche affrontare le sfide Master Hunter, Weapon Master e Nature Photographer.
Dopo ogni uccisione, Trevor fotografa la carcassa con il telefono e invia l'immagine a Cletus. Cletus risponde con il pagamento, mentre altri contatti telefonici possono reagire alle fotografie. Quando la luce del giorno svanisce, Cletus invia a Trevor un avviso che la sessione sta per terminare, poi gli comunica che la caccia è finita per la giornata. Trevor torna al rimorchio nella Chiliad Mountain State Wilderness.

- ◆In the Ammu-Nation in San Andreas the player can hear the advertising speaker talk about anti-materiel rifles for hunting with the famous punchline: "You don't need to clean the deer when it's already been minced!".
- ◆As in Red Dead Redemption, using very powerful weapons such as the rocket launcher or minigun may damage the animal so one couldn't skin it. Even if the animal can still be pictured, Cletus will pay much less if powerful weapons are used (except in the case of heart shots).
- ◆Although Cletus may ask Trevor if he can kill a female deer, he will still remind him not to kill any if a picture of a dead one is sent to him, and will tell Trevor to consider himself lucky in regards to his payment.
- ◆One can send the photographed kill to almost anyone in the protagonist's contacts list on the cellphone, and they will text back. Depending on the contact, the responses are either specific from the character, or randomized, generic ones.

Trevor will tell Cletus that he's helping out the "organic food movement". Impressed, Cletus will tell Trevor to hunt more animals.
